Evan
Having graduated in 2017 from the Montreux Professional Culinary School, he then worked in several hotels, as well as in establishments specializing in Japanese ramen.
Passionate about culinary creation, he likes to fuse European techniques and aesthetics with the Japanese tradition of ramen and Asian cuisine, in order to offer a modern and original approach.

Han
With over thirty years of experience dedicated exclusively to sushi, trained in Tokyo in the purest Japanese tradition, he has held positions as sushi chef in high-end restaurants in Japan, China, and Switzerland. Sushi, according to him, is not about presentation, but about a daily commitment based on experience, rigor, and precision.
